St. Patrick's Day Recipe

Last week we began a Lenten Series: Meatless Friday Recipes with Tom Neeb, author of Food Flavor Fun. He was graciously enough to share a St. Patrick's Day recipe for your slow cooker ("crock pot"). Please visit Food Flavor Fun or Luxury Palate for more great recipes and food ideas.

And a Happy St. Patrick's Day to everyone!  In case you've lost your recipe or need a new one to try, I thought I'd share a great slow cooker version of Corned Beef and Cabbage.  Put this one in the pot and wait for the great taste to just happen.  Simple and amazing.  OK, enough talk….Let’s get to the recipe.

Crock Pot Corned Beef and Cabbage
Ingredients:
·       3 - 4 lbs corned beef brisket
·       1 onion, coarsely chopped
·       1/4 cup cider vinegar
·       1/4 cup brown sugar
·       1 -2 tablespoons Dijon mustard
·       1/2 teaspoon pepper
·       1/4 teaspoon ground cloves
·       1 medium head of cabbage, cut into wedges
·       1 apple, sliced
·       1/4-1/2 teaspoon caraway seed
·       12 ounces dark beer

Directions:
Place corned beef brisket and any seasonings included in your slow cooker. Top with onion. Whisk together the vinegar, brown sugar, mustard, pepper and cloves and pour over top. Add the cabbage wedges, apple slices and caraway. Cover and cook on low for about 7 hours or high for about 4-5 hours.
